Progress Report

I must say that I am struggling, but I am surviving and more than that thriving. I am keeping a positive attitude and mindset."I keep on keeping on".I am truly blessed and it is great and bearable because my hubby is supporting me and that makes it a lot easier. He even got up early with me on Sunday morning and went into the basement and exercised with me! Yippee! I was so happy since he is slim and trim and does not need it, but he promised to help me and he is holding up that promise.I gives me hope and it is fun doing something doing. It sure does help when you have support, be it a spouse, sister, brother, mother or friend; so thank all of you friends out there who in one way or the other has supported me or each other. I know it is hard and can be rocky sometimes, but don't give up, let see those pounds fall off.
I will test the scale tomorrow and hope it is working :)

This is the true story of George Phillips of Meridian, who was going to bed when his wife told him that he'd left the light on in the shed. George opened the door to go turn off the light but saw there were people in the shed in the process of stealing.

He immediately phone the police who ased "Is someone in your hours? and George said no and esplained the situation. Then they explained that all patrols were buy and that he should simply lock his door an an officer would be there when available.

George said, "Okay," and hung up, counted to 30, and phoned the police again.
Hello. I just called you a few seconds agao because there were people in my shed. Well, you don't have to worry about them now, because I've shot them all."

Then he hung up. Within five minutes three squad cars, an Armed Response unit and an ambulance showed up. Of course, the police caught the burgular red-handed.
One of the policemen said to George" "I though you said you'd shot them!

George said, "I thought you said there was nobody available!"

Reflections of a Beautiful Morning

Sensible Snacking recipe - Sweet Potato Fries

2lbs sweet potatoes
1 eggwhite
1 tsp. dried thyme
1 tsp garlic salt (can decrease amount for health reasons)

Step 1
Whisk egg white, dried thyme, garlic salt, and black pepper until it bubbles.
Step2
Place sweet potato wedges in the mixture, make sure it is coated with mixutre, then arrange in one layer on baking sheet (spray baking sheet with olive oil spray )
Step 3
Bake for 22 minutes or until golden brown, you can turn to allow even browning, and you can add your favorite spices.
Make sure the oven is heated at 475 degrees.
Serves 10 people and you it takes 5- 25 minutes preparation time to completion.
Calories - approx 55 per serving, 1g Proten, 13g carb, 0mg chol, ototal fat and sat fat.
Great way to go, guilt free snack and the kids will love it too.

Recipe of the Week

Hello everyone, I got a request from Ms. Latina for the recipe for the healthy whole wheat bread. Thanks to her, now I hope everyone will enjoy their own version of healthy bread. Great for all you bread lovers like me. Let me know if you have any problems. Remember every spoil is a style.
Whole Wheat Bread
Ingredients
1 lb whole wheat flour1 lb white flour1 tsp salt2 oz butter/lard 1 oz yeast4 tsp sugar (can substitute Splenda)Warm water (approximately 16 ounces or 2 cups)
You can also add some flax seed or grains to spice it up (Optional)
How to Prepare
· Liquefy the sugar in a little warm water then sprinkle yeast on top and allow rising.
· Put flour and salt through a sieve, and add about ¼ of the total amount of flour to the yeast mixture. Cover and leave in a warm place to set, (i.e. until the mixture is bubbly) -- about 1 hour.
· If butter/lard is used, rub it into the remainder of the flour using fingertips or a fork until the mixture is like breadcrumbs.
· Add this flour to yeast mixture and knead well until smooth elastic dough is formed. Add some more warm water if necessary, as hard dry dough does not rise well.
· Put the dough in a greased or floured bowl, cover and leave to rise to twice its size.
· Knead lightly to avoid bursting any bubbles, and without using extra flour if necessary. Mould or shape into loaves.
· Cover and prove (i.e. put to rise again for 20 - 30 minutes).
· Bake in an over at 325 degrees, until thoroughly cooked (Approx 55-65 minutes).
